Baking for marvellous Monday

A couple of my favourite colleagues are retiring later this month. Although I have only been working with them for 18 months, I know I will miss them dearly. They are a stablising force in our team and have been very generous with their knowledge. I look forward to seeing them on Monday mornings.

Tomorrow morning we will have our last staff meeting as a team, so I have baked some morning glory muffins to make it a little more festive. I’m hoping for a marvellous Monday.

Morning Glory Muffins

150g Self-raising Flour
1 tsp ground cinnamon
Pinch of salt
1tsp vanilla essence
125g caster sugar
1 grated carrot
60g raisins
60g chopped nuts
60g dessicated coconut
1 grated apple
2 medium eggs
60ml vegetable oil

Preheat oven to 180 C or 350 F
Sift flour, cinnamon and salt into a large bowl. Add sugar, carrot, raisins, nuts, coconut, apple and combine the ingredients. Add eggs, oil, vanilla and mix until combined. Spoon into greased muffin tins and bake in a preheated oven for 20 minutes, or until risen and golden brown. Makes 12 large muffins.
